Steak Corn Tortilla Breakfast Wraps

If you struggle to get enough protein into your daily meals, you’re going to love one of our all-time favourite breakfast recipes: steak corn tortillas. They’re packed with flavour, simple to prepare, and completely addictive—you’ll be hooked after just one bite.

We love using Cool Chile white corn tortillas —made with clean, simple ingredients, no seed oils. These tortillas are light yet full of character, making the perfect base for your favourite fillings. Our go-to combo includes tender, slow-cooked grass-fed beef steak, crunchy spring onions, caramelised brown onions, and a refreshing squeeze of lemon. We like to cook everything in beef tallow for deep flavour and toss the tortillas in butter to finish. Add a big spoonful of Holy Moly guacamole for creamy, tangy balance pure perfection.

Makes: 3 wraps

Ingredients

Base

- 3 Cool Chile white corn tortillas  
- A knob of butter or ghee (for warming tortillas)  

Filling

- Grass-fed beef steak, chopped (or use leftover roasted chicken or scrambled eggs)  
- 1 tablespoon beef tallow (for cooking)  
- 1 brown onion, chopped  
- Pinch of Himalayan salt  
- ½ lemon, sliced  
- A handful of chopped spring onions (for garnish)  
- Holy Moly guacamole (or any guac you love)  
- Optional: Grated cheese or scrambled eggs for extra richness

Method

1. Prep the Ingredients: 
   - Slice half a lemon.  
   - Chop the spring onions and set aside for garnish.  
   - Chop the brown onion and steak into bite-sized pieces.

2. Cook the Onions and Steak:  
   - In a large frying pan over high heat, melt the beef tallow.  
   - Add the chopped onions and sauté until golden and soft. Remove from pan and set   aside.  
   - Sprinkle the chopped steak with Himalayan salt and add to the pan. Cook for 6–8 minutes on medium-high heat until browned to your liking.  
   - Return the onions to the pan and mix everything together.

3. Warm the Tortillas:
   - In a separate pan, melt a small knob of butter or ghee.  
   - Lightly warm each tortilla until soft and slightly toasted.

4. Assemble the Wraps:
   - Lay warm tortillas on a plate.  
   - Add the steak and onion mixture, then top with guacamole, cheese, or scrambled eggs as desired.  
   - Squeeze over fresh lemon juice and garnish with chopped spring onions.

5. Serve immediately and enjoy your protein-packed breakfast wrap!
